June 2025 will see Vestige Collection open the doors of Vestige Son Ermità and Vestige Binidufà within the bounds of a shared 800-hectare Menorcan estate offering exclusive coastal access.
Since its launch in 2023, Vestige Collection has established a reputation for its distinctive approach to the regeneration of characterful properties in mainland Spain and the Balearic Islands. With the Madera Fernandez family at the helm, the brand prepares to unveil two new hotels, Vestige Son Ermità and Vestige Binidufà, on 15 June 2025. Building on the success of its inaugural hotel project, Son Vell, Vestige Collection will complete the landmark project with the brand’s in-house architecture and design firm, Vestige Estudio, to retain its signature style. The meticulous restoration of these two 18th century edifices, gracefully poised within an 800-hectare pastoral estate, exemplifies the brand’s unwavering commitment to revitalising once neglected architectural treasures.
The two hotels, comprising of 22 spacious guest bedrooms and sumptuous suites, are discreetly connected by a private road, affording guests utmost privacy and serene seclusion. Occupying a delightfully rural estate in the bucolic heart of the island with effortless access to hidden calas and secret coves, Son Ermità and Binidufà blend together to offer a singular guest experience. This unique dual-property concept invites guests to indulge in amenities across both locations, from distinct dining options to high-tech gym and spa facilities, including a hammam, sauna, treatment rooms, and an indoor plunge pool.
At the foot of a low-lying wooded hill, Binidufà is a typical Menorcan farmhouse, fashioned from red-hued stone and circled by a dotting of agricultural outbuildings. Perched atop the hill amidst swaying palms, Son Ermità commands breath-taking panoramic views over land and sea. Sophisticated, rustic-chic interiors that pay homage to the properties’ original features while embracing contemporary, elegant design, harmoniously blend earthy colours inspired by Menorca’s farm-land origins with locally sourced furniture, restored antiques, natural materials, and contemporary art.
Consistent with the Vestige portfolio, Vestige Estudio, also led by the Madera Fernandez family, exclusively drive the brand’s projects with a determined passion to honour the history and legacy of each Vestige property. To ensure authenticity to the agricultural origins of Son Ermità and Binidufà, Vestige has built upon the properties’ existing architectural structures to maintain their roots, whilst artfully showcasing the brand’s signature style and flair through the choice of carefully selected materials and finer furnishings.
The culinary offering will see two on-site restaurants; an innovative fine dining restaurant at Son Ermità where Vestige’s chefs will reimagine classic Menorcan dishes using seasonal fare; and a plant-first farm-to-table restaurant at Binidufàá offering a fresh, flexitarian approach centred on locally grown vegetables, with the option to complement dishes with meat or fish.
With 4.5 kilometres of coastline within the estate, guests can delight in exclusive use of five tranquil calas and coves, while a curated selection of guest experiences are designed to deepen understanding of Menorcan culture, tradition and customs. Offerings include jeep tours, cooking workshops, sunset picnics, stargazing, excursions to Camí de Cavalls, boat tours, archaeological explorations, yoga and Pilates classes, live music performances, horseback riding, and bicycle adventures.
